pig roast

We had a pig roast to celebrate my 30th birthday over memorial day weekend. I bought a 100 lb. pig from a farm in Athens, Ga. I found some good resources on the web that I followed to roast the pig and it turned out great. The main site that I used was cuban-christmas.com. Everyone that I talked to had a different idea of how long it would take to roast the pig. This site was right on the money at 6 hours for a 100 lb. pig. I ended up starting at 5am though - just in case!

It took 48 cinder blocks and a couple of rolls of alluminum foil to build the roaster itself. I also made a rack or cage to hold the pig over the roaster. It was made with some rebar and 4 oven racks. you can see what I am talking about below.

The ribs were a bit hard to cut though. Other than that, it carved up nice and easy. Here is my brother, Davis again with what appears to be one of the legs.

My friend Mike took the ribs and bbq’d them up and through them on the grill to get them nice and caramelized. Those were some “slap yo mama” good ribs.

I hope to do this many times again. Next time, I’m not going to start until after 10am though! I was exhausted by the end of the night.
